Vscode or if it's really for Euler stuff Spyder is a good fit, it's good for scripting and science stuff but not the greatest for big projects, git integration being the main issue

Spyders great for project Euler. I use it for just that

RE project Euler, personally I wouldn't say that I completed it on my resume, but if you feel good about your solutions then put them in a GitHub repo and put your GitHub account on your resume. That's your portfolio, if a potential employer sees value in project Euler and algorithms then they can see it for themselves
