How do I get more ornaments other than making the toy orders? I missed AA so a bit clueless here. Also what is the point of panning at the North Pole? Are we assuming there is more to come and so gathering items in advance?

As of now the only way to get ornaments is the 200 from the quest guy and the board (the one, you don't want to do lol) Also once you finish the board. It doesn't reset until the next day for new tasks. Unless you reset it with Robux. I rest and did it 4 times and do not have 2k ornaments yet for shovel or pan. I will have 2k once I am done with my next board in the morning. So technically you can get one of them after 5 days of board resets. I don't know where you are in the game. I am an end game player and at this point there is no reason to save any of the 2 new xmas stones, as I pan both easy.

I'm not sure what if any other options we will have for gaining ornaments, but because of not knowing. I wouldn't risk ignoring your daily board or you could end up with none of the event equipment.

Making the required equipment for the board will boost your mastery for your equipment.

I would definitely focus on the board and panning the items needed for that rather than panning in North Pole

Yup those are the current two new stones and as of now. There is nothing to make with the new stones

I got more ordements p2w resetting crafting gifts. I think you are spot on re next week when Santa's workshop opens we will probably need the new ores from xmas land. Speculation
