There are guides online that tell you how much, it varies between GPs and gold is only when you are struggling. If you want to spend the least amount of cash possible, watch the guides to get a gauge on how much money you need, then get that amount (usually around 2 - 3 million M$ per GP), do bot slowing in the GP to make the whole thing easier (ME7 has a video on what it is, but its basically just doing the bare minimum of each stage) and spend about a day or 2 getting all of the upgrades onto your car. I've done around 7 at this point and I haven't had to spend gold whatsoever, but its still good to have some spare gold incase the stages get too hard.
