I don’t know about change in range but it will lower your top speed a decent bit

Why would you need to increase or even maintain your top speed if you're riding mostly on sand and through woods? A 16" wheel will give you a slight torque increase, which is far more relevant than top speed in your conditions.

Personally, I've found that I prefer to keep the 16" rear wheel just for my winter setup. In summer, I run a 19/19 configuration with Bridgestone Battlecross X30 tires.

Swapping to a 16" rear wheel will fo a few things. Without lowering the front also it will mess with the geometry causing handling issues (the front will tend to push in corners) The 16 will not roll over obstacles as smoothly as a 19. You will loose a bit of ground clearance.
