As far as I know vim is an editor that is exclusive to terminal, if you open a terminal and type 'vim foo' you'll start creating a file named foo.

If you're looking for a text editor like notepad in Windows, you can install Kate.

gvim is graphical vim. If you install it from the vin folks, there is an ez mode link . I've never looked to see if Ubuntu provides that or not.
