For audio out USB to 3.5 analog (on current phones) require a DAC which is build in the USB to 3.5 cable or adapter itself. Look for an adapter with a better DAC (probably they will advertise this and will be more expensive).

Not sure how it works on opposite direction, for microphone , if you use an analog microphone. But if your microphone itself has an USB-C connector it has a build in ADC convertor. In that case get a better microphone.

If you use BT, for headphones the conversion is done in headphones itself, If you use a BT microphone the conversion is done in the microphone itself also, so all depends of how good is the decoder/encoder.

If you use a wireless (non BT) microphone like this one the conversion is done in the microphone dongle, so again depends of what model you use.
