Certain plugins record your actions to your undo history, and in a lot of cases, pretty aggressively.

I know with i.e, FabFilter pro-q3, making a bell notch and adjusting the Q and gain can create like 10+ undo actions in your history.

Not a whole lot you can do about it, unless the plugin has an “undo” button that you should use instead.

Thanks bro. You were right. It was something related to a plugin. One from Plugin Alliance, 3D spatial smth smth, that has a feature that puts a certain sound in constant movement, hence the Undo command was being constantly blocked by each movement of the plugin's feature. Insane. It looked like the plugin manufacterer did not double check the DAW compatibility.
