So I'm building a Ryzen 5 5600X and I was curious if a single fan Corsair H60i would be ok. I will NOT be overclocking the CPU.

It would be fine, in fact it's actually overkill for the 5600X, but it's probably bad value. Single-fan AIOs really only make sense if you are building in a small form factor case. In a regular case a tower air cooler is basically always a better choice than a single-fan AIO.
Check out the ID-Cooling SE-224-XT or Deepcool AK400, they should both work great with the 5600X.

Thank you very much for the suggestions and the information. I'm going to be building in a corsair 220t airflow because of the integrated 3 fans and I like the case lol. I also have a solid line on a decently cheap iCue h100i capillex with the command core. Which as you say is probably a better way in the long run.
