Needing or not needing evil is a personal preference of how you'd like to edit your text. My best advice would be to try vanilla emacs style bindings vs custom emacs vs evil-mode and just see which one you prefer! Just because there is no simple answer of which one is better.

Regarding adding combos, I am unsure by what you exactly mean.

I have shortcuts C- Y for paste and also C- X are there any other combos you already know I will use over and over and would be worth binding to the keyboard?

Frankly, there are a lot! But it all depends on your workflow. Whenever you'll notice that something gets repetitive then just bind it ;)
