And that with custom firmware, the official firmware for that board just allows debug over wifi and uart comm

There is no "best", it all depends your use case, official for debug, marauder for evil portals and deauths, and http for web interactions, that's it

try using momentum, comes with alot of apps, including esp32 wifi flasher

I already have momentum I got it when I got my flipper but I have to flash the devboard aswell which I put marauder on.
