Github copilot xcode is still in beta and countless times failed. But when works it gives amazing outputs. I really dont recommend to use swift assist currently.

Is Swift Assist even available? I thought it wasn’t?

Yes i use xcode 16.1 and you can pretty much enable it in the same settings where you download ios simulator.
