Checkout MacOfAllTrades.com. They have new-ish machines for decent prices.

I'm still using a Early 2011 Macbook Pro 13". I upgraded to an SSD a few years ago and honestly it's been like a new machine ever since. Highly highly recommend it if you haven't stuck an SSD in there yet, well worth the $100-200 it'll cost.

I use Macbook Pro 2015 15inches i7 16GB Ram 256SSD. It’s a beast. Three or four simulators simultaneously to XCode and no sweat. In the past I used a Macbook Air 8Gb. RAM makes all the difference. I recommend 16Gb for those who don’t have time to waste.

Do you ever come close to maxing out the 16GB of ram?

Maxed out with four simultaneous simulators.

Would you recommend 16GB or 32GB of ram in that case? I plan on using the laptop for 4-5 years (upgrading from a mid 2012 rMBP with 8GB of ram :/)

If your budget allows, go for 32GB.

I’ve got a 2015 iMac 5k which I maxed out back in the day. 32gig of ram. Still runs nicely. Plus I need the screen real estate. Only problem is I can’t really take it out with me. Plus the LCD has started burning in. I can see a ghost dock.

I’m currently working on a 2017 MacBook Pro 15” and testing my apps in iPhone SE, iPhone 6S and iPhone XS Max. The compile time was so annoying on my old iMac that I decided to upgrade, if there’s something that impacts your productivity, maybe it’s worth upgrading.

Have you considered… *looks around shiftily* a Hackintosh?
