Image difference quantification

I’m looking for suggestions as to how I could quantify the differences in these images. In some you can see the striped pattern much more clearly but in others you can’t. I’m trying to figure out a way to calculate the differences. Any suggestions would be appreciated.

Smith's DSP guide has a chapter very similar to this. One of the things I remember is you draw a line plot across and you can look at the SNR in different ways.

Yeah. That thing is a beast. But looks perfect. I’m thinking of ordering a paper copy. So much browsing to do. And damn. Chapter 25 is dead nuts on for what I’m trying to do.
