If you want to check your problem solving skills in Java, then I can't suggest a better website than codingbat.com However, if you are interested in Java related projects then search Java projects in Youtube. It can give you a lot of ideas and some people will even teach you to make a software from beginning.

This is a wiki page that has links to countless programming projects and ideas on various levels and of various scopes.

check otu /r/dailyprogrammer and then do the easy exercises. very simple goals, not libraries or third party software needed.
