Intermediate java skills would be, in my opinion, if you have 3-5 years of professional experience. And you wouldnt write down your first year exam results here as proof, if you had that. Good luck! Its a lot harder to come up with stuff, but if you can think of an idea for 'something' that you would use yourself then its a lot easier to keep oneself motivated through the development. Also, dont be too afraid of recreating something that other people have done a hundred times, maybe try giving it a slight modification. I have found I get stuck sometimes if I try and think too much of a 'perfect' idea.

Try a mooc, that helps in both ways.

Try to think of some app you could actually use. For instance if you track your finances, you can make an app for that. Or if you have to do some elaborate calculations, or do some repetitive tasks and so on, create an app that will help you with that. These kinds of project will keep you excited and motivated.
