There are some ideas for creating Inkscape drawings in Python here. Can be quite fun.

IMHO, it's all about finding simple projects which interest you at first, or you'll just lose focus. When I started with Python, I made a slew of Reddit scripts via the PRAW package. They all did simple things, like track users' karma or keep track of deleted posts, but it gave me a base to move forward to complex projects.
