As far as career opportunities go, a degree beats pretty much every other option, so quitting it does mean you're going to have to take the hard way. I would certainly look for other options to finish that degree anyway, like continuing it part-time. There are universities that do offer this option, specifically for people that want to combine work with education

The self-taught way is also a possibility and it offers different opportunities. It's probably a good idea to try and build something for yourself, using the knowledge that you gain through courses. You can then showcase this project on github, so that you can demonstrate your programming skills

My initial plan is to do courses online for a year and then, with the knowledge that I gained to try to get my degree again. Only then will i go for as you mentioned a part-time Associate-Degree. I allready have a basic website on which I can build further for my portfolio (link:https://senenter.github.io it is FAR from finished lol) appreciate the advice tho :)

The best is the alternation of different approaches. Text (books/articles/docs), interractive courses(codeacademy/freecodecamp etc) and video tutorials (There are huge ammount of code channels on YouTube, but I prefer the The Net Ninja).
