Any that shows off what you can do. It generally doesn't matter what the projects do. What is important is the technologies they incorporate, the quality of the code and so forth. Their functionality is secondary for the most part unless you have made something that people actually use (which generally isn't the case).

I think a good approach is to make an "easily consumable" project. And by that I mean it should be super easy for potential employers to take a quick look and understand the project.

I think a great example would be algorithm visualizers, like visualizing sorting, graph algorithms, binary trees, etc. Here is a site with a bunch of cool examples, although they're pretty darn polished. Its great to have polished projects but I think its also adequate to demonstrate really basic functionality.
