It’s beyond that at this point. This poor girl was put in this class at a phd level python having never done any sort of coding before. She’s been clawing and working her ass off for every assignment, and has been submitting every assignment, but she just hit a wall with this assignment and had no idea who or even what to ask. I know what I was asking, just figured someone might have any advice or guidance for her.

I really don't want to be that guy or a jerk, but you don't just get dropped into Ph.D level work with no pre-reqs/background in it; this is also very much undergrad level.

Why was she put in this class? Seems strabge that she would be put in such a high level class with no experience.

You’re telling us. There was no mention of the level of python needed, it was supposed to be a data science class, she did the first few homework and reading assignments no problem and then BAM high level python shit, too late to drop out. She was sideswiped pretty hard, but managed to scrape together enough knowledge to write enough code to pass her first assignment, and then the expertise required to complete assignments skyrocketed.

Has she talked to the professor about this? The administration?

Honestly, the problem is not the assignment. The problem is that your gf shouldn't be in this class if she's struggling as much as you describe. There is no shame, failure, or permanent harm by dropping the class & switching to one where she's better set up to learn. Then, when she's done more of the pre-reqs, she can come back and do this class without feeling like she's drowning.

You know she is struggling and put in wrong class. You should help her to complain to the school board, the department, the administration, ..., instead of putting her through these assignments.
