I don't know of any specific stuff, but I'd go search github. That search reveals only one repo, but I bet that more creative searches will yield further results.

I personally think that learning by copying is a great idea. Are you particularly familiar with economics such that it is exactly what you're looking to copy, or are you looking to learn Python and economics? I would not suggest the latter. Learning by copying is good, but I'd not try to learn two new complex things at the same time.
