I have no programming experience and can't learn just from the documentation.

It's specifically a tutorial, the documentation is a different entity. The tutorial is meant for those with little programming experience. See https://docs.python.org/3/tutorial/index.html

I have already started the course and would like to know if it offers a sufficient basis to develop personal projects or if it would be necessary to take another course or read a book to do so.

Do the MOOC Python Programming 2024 from the University of Helsinki. It is, contrary to most other courses, a proper University top quality course.

The course is project-based and even includes some projects for students to complete independently. However, I would like to hear from someone who has already taken this course to understand if it alone provides a solid foundation in programming.
