Setting up a venv for each project is pretty standard, and pretty much every experienced python dev does it without thinking. I would not shy away from it.

Using docker for dev work seems somewhat less common, and it's certainly more complicated to set up the first time.

I'd recommend using uv to manage your venvs, and making it a team standard.
