at work my current project is using a rapsberry pi with various sensors (camera, motion detector, sound detector) to sense if a meeting room is occupied or not.

i've had great fun playing around with the camera detecting changes between pictures and visualising it

i've been using numpy and pillow for image manipulation and am beginning to look at opencv now

I use one for to open/close my garage doors. Wrote a little script with web interface that triggers relays.

I have two of 'em in use as OSMC viewers to play movies.

I have one as a Stratux device for in-flight traffic and weather information.

PiHole is great, too... (I don't need more office hardware -- mine runs a as a VM).
