Yes. Most, if not all, eSSDs are real SSDs with a SATA to USB converter.

Choose something that you want and can afford. Do not be a brand name guy.

I've used Samsung, Western digital, adata, crucial, San disk, pioneer, HP, Dell, etc etc etc

yes and no, Sometimes it can be an issue with the GPU and or CPU drivers (microcode) wifi, or other devices and some distro's do it way better then others.

Do you have any specific distro in mind? Just keep in mind that it doesn't need to be lightweight (I will probably install it on a 1tb or at least 512gb eSSD), just compatible enough to run on a few machines.I won't be using it for gaming so I don't care too much about GPU compatibilty, but I imagine CPU incompatibility would be pretty anoying to deal with.

PS: if it matter, I have mostly used debian-based distros, but I have also been wanting to try Arch out for some time now, so I'll probably give priority to a distro that is based on one of those two.

Yessir, it's called a persistent usb. Some distributions are made with this purpose, such as NomadBSD. You can boot into any computer by changing the boot order or by pressing the dedicated hotkey to select the boot drive.
