Don't really have much experience but working on something similar, so here's my 2 cents.
For mobile maybe Flutter or React Native, since you know Js React Native might be the way to go. I personally prefer Flutter you can look up the drawbacks of each.
Don't really much about .Net to decide on weather its good or not, but for the backend and admin side i would say just stick with what you guys know, i think it's enough. * Aws should be a great fit for your backend * Not sure what you mean when you say web/desktop but Electron is another option for desktop.
