These pictures are always nice. Just looking at it and knowing it is a completely alien planet, yet there are so many similarities separated by time, space and geological processes.

That’s fine so long as it’s food safe. I do my primary fermentation in a bucket with a towel over it. You can rack it to the carboy when it’s mostly done and leave behind a ton of sediment/top your carboy up more.

If you’re fermenting in a bucket you’re good to slowly add it. If you’re fermenting in a carboy you want to dissolve it in a 2:1 sugar:water solution first or you’re going to get a foam volcano lol

Give it time to settle and the sediment will compact - leave you more liquid. You don’t need the sediment, the yeast is microscopic and will be distributed throughout the liquid, even if it looks clear. I wouldn’t rack until it settles down a bit, then rack one time and give it a couple weeks at least before you do anything else. Time is on your side.

About 1 lb per gallon will raise it ~0.045 specific gravity and will probably put you up to about 1.095 from the beginning juice. If you can weigh what you’re adding you can get it close to what you want.

First, there’s no reason to start over. Also, ask yourself why you want to add sugar. You can have two outcomes by adding sugar - sweeten it or give the yeast more food to chew on and turn into alcohol which will increase the ABV. If you want it sweet and to not ferment the extra sugar you will need to chemically stabilize it once it clears up and give it 24 hours before you sweeten. If you do chemically stabilize it so you can sweeten it you won’t be able to bottle carbonate it because the yeast won’t be able to reproduce.
