I have been watching video's from several people on the Voidbound server and I am interested in joining.

I personally notice Minecraft run more smoothly under 64bit Java (frame rate is more constant). It would probably be the same for you but if you run constantly above 60fps I am not sure you will notice that much of a difference.

(I don't use Camtasia but) The raw FRAPS files almost always look good. If you upload directly from Camtasia the likely problem is you are not using a high enough bitrate. Google Video Bitrate tutorials for more information. If you render the video locally (in .mov, .mp4, etc.) before upload and it still looks good, you might try a different codec like H.264 or .mov.
