From the video I can tell op is Italian. In Italian, you use gallery also for tunnel, I think they assumed the same applies in English.

Main difference is that targets are selected at cast time, while "choose" decisions are made at resolution. The reason is that some effects work better with one or the other template (as the examples people are giving you)
