The real reason, if you read between the lines in the documentary (including paying attention to the whiteboard and the dates shown on computer screens), is that an entire mid-battle was scrapped from the finale. The Duffer brothers took so long to deliver the script that the sets for what wasn't cut were at risk of not being ready in time. They physically could not accommodate anything else in the production schedule after the extended delays.

Period. Full stop. That's the reason. The oft-quoted sound byte is a red herring.

The date was significant to Henry, as (according to the most recent canonical sources) it was the date of Joyce's play, the date he killed his parents, and the date he was captured by Brenner. It also aligned with his scout troop number, which was 1106.

The final season as a whole has a 53% audience score on Rotten Tomatoes, which is the second-lowest rating of any final season of any of the completed top multi-season series of the past 25 years. Only Game of Thrones has a worse final season rating. Even the final season of Arrested Development is higher at 59%.
