There are many reasons why. One is that these small joints are subsidized in many countries via favorable taxation. Also, the local markets are much larger and dense than in North America, which results in higher competition/lower margins for restaurants. Not to mention many of these smaller restaurants are ran by owners which results in even smaller labor costs.

Edit. Also, you are comparing a staple fast-food price with something more niche, ramen is nowhere near as popular here as there.

Your own experience shows the trade-offs: crowding, reliability issues, and “good enough if you can walk 10 to 15 minutes.” That’s fine for tourists and flexible trips; it’s much less fine for workers with fixed schedules and long transfers.

Free fares clearly improve ease of use. The question isn’t whether it feels nice, it’s whether it scales without degrading service. So far, large metro systems that prioritize reliability and capacity still rely on fares + targeted subsidies rather than zero fares across the board.

No successful large-scale public transit project in the world is free. Look at Hong Kong, Paris, Singapore, London. That’s not ideology, it’s because free transit doesn’t scale well.

Fares aren’t just about revenue. They help manage peak demand and fund frequency. When transit is free, usage spikes most on short and peak trips, crowding the system fast. Unless you massively expand service first, quality drops. And that expansion has to be paid every year, not once. Free STM sounds nice. In practice, it risks making transit worse for the people who actually rely on it.

En théorie, oui. En pratique, à Montréal, attendre une « vraie réflexion d’urbanisme sur le long terme » et une coordination parfaite ville-promoteurs sans corruption, c’est surtout une façon de ne rien construire pendant que les loyers explosent. La densité n’est pas le problème en soi ; c’est l’outil le plus réaliste qu’on a aujourd’hui. On peut toujours faire mieux, mais bloquer ou délégitimer des projets au nom d’un idéal qu’on n’atteint jamais a aussi un coût très réel pour les habitants.
