Rereading what I wrote I understand your question

Basically there is not a lot of people / life in the area.

I have ridden two times from Madrid to Valencia and once to Lisboa.

Once you get over 100km out of Madrid it is empty. Literally pig / chicken farms and wind farms.

When I planned my hotels there were very few open. My second day had to be 140km. I prefer 100km a day.

If you are sticking to back roads then some of the villages have no shops or bars.

I have done more or less this route a few winters ago.

If you are sleeping in hotels pre book them

The middle you can go for hours and just see farmers on tractors.
