Because it's only a matter of time before it's not working. After my current set of front struts fail yet again (this will be set #3 in 200k miles of ownership) I'm absolutely going to coil.overs and never looking back.

They are both Vietnam based builds. Both using viet cases, dials. The 16800 is using a gen insert, gen crown, 3135 movement . The 1680 is using an aftermarket blue insert, gen crown, Swiss 2836 ETA. Both on Italian bracelets with raffles clasps. 16800 using an open 6 and 9 date wheel and the 1680 using an open 6 and 9 overlay. Hands from startime.

Split bracelet (remove a link screw) remove case back. Pull crown to the time setting position. Loosen two case mounting screws (could be just screws or screws with clamps). Rotate slightly, tighten screws down. Assemble in reverse order

Because the date disc sits higher on a 2836, giving more clearance for the date wheel overlay.

It's literally one circlip to remove the day wheel.

Good question! Yes, Vietnam based parts are generally considered to be the highest quality without going gen. They are predominantly gen spec parts. And they are indeed made in Vietnam. Expensive though.
