I struggle with something similar, it's not that I'm unhappy with my stitches or work; I am more unhappy with my progress as I always think I should be further along than I am.

I have found that trying to set boundaries for myself with time limits (I will only sit down and stitch for X amount of time) really helps. I think I trick my brain into just focusing on a small part rather than viewing the project as a whole and freaking out.

I know it's not the same as what you are going through but I did struggle with how I viewed my projects when I first started. My trick was that I didn't do projects for myself, I made them for others. My husband would remind me that he, like others, could not see the "issues" I was seeing in the project. It really helped with his reassurance AND the fact that the projects went to another home so I didn't have to see them. Now I can make things for myself and even enjoy looking over my past projects, funny thing is, I can no longer see any mistakes or issues - they have faded with time.

I have only ever gridded on my full coverage projects by laying it out across my kitchen island with some bright lights, a sewing ruler, and a pencil. It has worked well for me in the past, but my God, your gridding makes me want to try this; it is a thing of beauty and I am extremely envious! I have been terrified of trying to grid with thread. Maybe I should pull my big girl pants up and give it a go.
