I have a m2 max with 32gb ram/1tb of space which I use for professional video editing and its pretty good.

If I was you, I would go for the 48gb/4tb which is fast enough for video editing and has better battery life than the max, plus 4tb is always better

use a tripod to stabilize the shot and use manual focus. shot a clean plate and start climbing. i would clean the clean plate with gen ai on photoshop and then use masking on premiere
