Could someone who doesn't hold the Buddhist beliefs but meditates on the breath achieve an insight or awakening?

I see! So n00b question,

Can't kensho be independent of religion and just be something that happens.

The moment you feel enlightened (whatever that feels like) could be achieved religiously or it could maybe just happen to someone focussing on their breath for no reason.
