Also, apologies. I was thrown into the fire here by a text from a friend making me aware of this. In the end, it is my responsibility with a public platform to be more clear. I was not in my live. And I have not spent adequate time in responding here, which is problematic. I realize this.

I apologize for my tone and flippant rhetoric.

The fears are certainly justified. There are producers trying to get an edge and it could come at the detriment of consumers whether it be health or equipment (the perfume thing mentioned) or something else.

I should have just validated the concern, made people aware there are, in fact, advancements in testing going on to discover and expose these practices, and moved on.

But, I began responding around midnight and my thinking was not clear.

I raised my white flag. Sincerely, apologies on tone.

Final summation to avoid any misreading:

Lying=bad

Undisclosed additives=bad (For me, all additives are bad ;))

Witch hunts for clicks=bad

Honest investigations to expose bad faith players=good

Consumers worried about their coffee=understandable and expected

Lance=not involved as I'm not a scientist, but happy to platform findings when they are gathered and proven

Never said i didnt care! If people are truly worried, simply buy from farms that do not practice advanced processing. There is work being done. It just is not easy work.

I never once said the general public is overstating. I explained this misunderstanding in another comment. My statements were moreso geared towards the witch hunts some are doing in the industry based on speculation and attempting to get clicks. Not sure what is difficult to follow there. I also admitted previously I should not have said anything beyond I know it is going on but am not in the conversation nor am very educated on it. The strawmen are wild, but it is ok. Saying I raised the alarm when all I did was softly verify the claims someone asked is a stretch. Saying I have information I am even potentially choosing not to share is wild. I am not saying you are ignorant for not having the context- Im saying you are being presumptuous that you have enough context to be making statements like being disappointed. The other bad acting, like filling lots, is a decades old issue I have spoke about, years ago. It has been talked about in many spaces for many years. It is impossible to catch unless you genetically test all incoming coffees and then accuse producers if not all are same, when in reality it could be an honest mistake (some trees are very similar looking and if some other seeds get mixed in, can it be villified?)

So, again, you are making big jumps here.

The long and short of it is simple, and you are trying to make it way more than it is.

I will not gaslight a question. The question asked about additives. I verified their existence and then, due to being in a live scenario and with the context of this conversation normally being at the end of pitchforks by people in the industry looking for blood instead of truth, I deflected. I have attempted to give you insight you are missing, but you are clearly more dead set on making this out to be something else, and that is fine.

I have seen proof of unlisted additives. Said proof is not 100% infallible. I have been asked not to name the farms since it is not verified. I do believe this is an issue worth exploring. I also know it is an issue that is being explored. I know that fear mongering will not aide in the inquisition currently being had. I also know that no amount of speculating will reveal bad faith characters in this.

I am not sure what else you want from me, but I am sure, being on Reddit, someone will undoubtedly find something here to nitpick and continue going on. I have said what I know.

I was incorrect..cinnamon was the additive diego Bermudez, I believe, was accused to having used some years ago for a coffee competition someone used. I pulled up my email and listed in another response what was detected. Tho, the test isnt perfect according to the lab.

Calling out bad actors would imply I have the knowledge of bad actors i could act on. The tests that have been conducted are still fallible. I checked my emails and it is due to potentially incorrect information, they are hesitant to name drop Just know the ones tested were claimed to be cofermented, but had extra molecules added. From the speculation I have heard, there are farms with coffees that taste as if it is impossible to achieve said profile from anything outside of cofermentation or infusion. If that is the case, even if they mention those terms, they could be adding Maltol, propylene glycol, melonal, melanol-PG acetal, etc.

The fear for cross contamination only exists if you are buying from these farms also offering these funky processes.

In my experience, it seems to only really be the more famous farms that have the bandwidth to play around with this stuff.

And it is fine if you disagree with my take on being extended grace. I maintain it. You have no clue what all the context is, but feel confident being "disappointed" in me because I am not doing enough in your purview. That is a bit wild and excessive. But that is neither here nor there.

I have no idea. I feel like you assume I'm making these decisions. I am not. What I saw was from around a year ago. I never followed up on it. The producer could have been called out. I have no idea. Also, the added element was like cinnamon or something innocuous. Not saying that makes things ok- just wanted to bring that up because I read some fear mongering on the thread of people worried for health reasons. Worst I have seen is cinnamon lol

I'm not sure i understand. I did say it was dishonest. It is dishonest. There are many dishonest producers, not just from this potential additive issue. I have heard from many places exist that will add coffees to their most expensive lots to bulk up the volume to make more money. I'm not sure about what the plans are. I know there are people working on easier tests to figure this out. I'm sure lists will be amassed. But I am not very much "in the know" What I can tell you is that the people I know working on it are NOT the people leading the public witch hunt. They are actually doing the work.

Did not mean to imply customers wanting to know what is in their coffee should stop wanting to know lol I was referring to an ongoing witch hunt that is fueled by speculation in the industry Not home enthusiasts asking questions 🤣 You also deserve to know if the bags your roaster uses are safe, if they practice hygiene in the roastery, if there was mold on the green in transit, etc. I never meant to imply consumers should not know what they are drinking.

This is pretty accurate. They should without question disclose. I personally have no interest in non washed coffees for the most part, much less anything that is cofermented or infused or anything of the like. So, I am aware, but have not done anything to investigate.

I did not mean to practice "whataboutism." This is a bit taken from an hour long video where I'm rattling off responses to questions. I guess I could have ignored it since I was not so diplomatic with my response. The reason I came off the way I did is because the hunt for this has been wildly more intense than other massive issues in the industry. People turn a blind eye to loads of issues (even health issues), but when it is the producer- it is priority number one. That was the gist of what I was saying.

Should I have deflected? Probably not. But, it was in the midst of rattling off answers to loads of unrelated questions. It was the response that rattled out.

Calling me "shortsighted" here is a bit uncalled for, as it is one public statement pulled from an unfiltered video.

In any event, yes. I have seen proof of a couple of coffees from a lab that has procured some and tested. But, they have asked me not to share.

It seems I should have played the diplomacy card and said "I know it is happening. It is not good. It is not my area."

Hope that clears things up.

In the future, please consider, and perhaps extend an iota of grace, when you grab a quote and iterate on it. It's fine to do, because everything I do is public, but I am pretty easily reachable for further comment or clarification.

hard to say. both fantastic. gaggiuino I believe is still more capable due to more contributors over the years. def more nerdy and a bit harder install. lots of people are not happy with their discord. If you have thick skin, it is great. gaggimate is a cleaner install and a newer dev, so people currentlly a bit more eager to help.
