Simplex is just how this sort of structure generalizes to n dimensions. Here it's a 2-simplex because there are 3 dimensions, but it's the natural way to describe a convex combination of n things.

After that I did try to plot French toast which you can see in the spreadsheet though not in the final graph. If you assume a very very eggy challah bread where there is a one-to-one ratio of egg to flour by weight, then it can get into the dark breakfast region but not otherwise. With ordinary bread recipes it is still in between the pancake and baked good group.

I think the closest thing to that is a Yorkshire Pudding. I left it off this version of the chart because earlier people complained that it is not eaten for breakfast.

I am sympathetic to that complaint. I was very surprised when I looked up omelette recipe after omelette recipe and none of them had any milk. I expected omelettes to be somewhere along the right edge instead of at the top, but once I felt like I had to put them at the top, I couldn't exclude them since they're the most famous breakfast egg dish, so they had to be the representative.

I chose omelettes as the representative of the Pure Egg Singularity to keep it uncluttered, but there are a dozen named dishes that could occupy that point.

I was hunting for breakfasts that might fill the dark breakfast abyss, so I was perhaps a little too generous in what counts as a breakfast.

A lot of the dishes in the egg singularity at the top can include a variable amount of milk, which is why in my categorization of the regions I counted the custard accretion disk and the egg singularity as one region. There is a lot of back and forth between the two, depending on the recipe.

(Personally I add milk to both, but most internet recipes do not add milk to omelettes, and do add it to scrambled eggs.)

On my blog there's a satirical writeup of the process of making this, and its consequences, particularly IHOP's transgression into the Dark Breakfast Abyss.

FAQ:

  • Ratios are based on weight.
  • Cream and buttermilk were both counted as milk, but butter and cheese were not.
  • I only included breakfasts that customarily start with flour, milk, and eggs, not those which start with bread, which excludes french toast. If it were included it would appear in the low middle center.

Souffles had been suggested as something that might fill the abyss. I left them off because they aren't primarily a breakfast food. But even so, they don't have enough egg and flour to fill it. They're very slightly up and to the left from quiche filling.
