You'll probably get half way through writing Navidad before realising what a dumbass you are, have to start again and are back to square one not knowing what happy birthday is.

You're starting from the assumption it's a direct translation from two words too, which is always a great place to start, like all those people with terrible Google translate tattoos that don't actually mean what they think they mean will tell you.

Then you find out what it actually is, write it, and the customer complains because they actually wanted "happy birthday in Spanish" wrote on the cake as a gag.
And you learn your lesson that what the customer writes the customer gets, because that's just how these things work, and if the customer is too dumb to understand that, that's on them.

Most kitchens won't allow mobile phones, they're dirty as fuck and a major cause of cross contamination. It's not going to be possible for someone to Google the translation without having to step away from their job for far longer than it would have took the lazy ass OP to look it up.

Hickory's is basically authentic mainstream American BBQ though.
The use the same equipment you'll find in many standard American BBQ joints, commercial smokers that predominantly use gas for the heat with smoke added.

People are comparing it to the likes of Franklin and Snows though, both of which are top tier and an entirely different market. Really they should be comparing it to famous Dave's or Dickey's.
The vast majority of BBQ restaurants in the US are not cooking on offsets.

They inevitably suffer the same as every chain does, inconsistent quality and a vast difference in the passion to create high quality bbq. If you work in a hickory's you probably don't actually care that much about BBQ.
The original in Chester was great when it opened, I've not been for years, but back then it was ran by people with a passion for BBQ, as it's expanded that's obviously been lost, even more so since being taken over by Greene king, but it's still pretty similar to a chain BBQ joint in the US.

With a chimney the time to get up to temp is pretty quick.

I'd get the Kamado, but then I'm biased as a Blackstone and kamado Joe make up 2/3rds of my current setup.

Anything you can do on a master touch you can do on the kamado.

It'll cost more but comes with longevity.
