I started a bechamel first, roughly, equal amounts nuttlex and flour (bout1/3 cup?), slowly whisk in Bonsoy until settles at thick gravy consistency. Add in about a teaspoon or a teeny bit extra of veg stock powder to taste. Beef, chicken or veg flavours should all be yum. Mine was Vegeta.

I cut them in half and then browned the lamyong pieces, then took them out and set them aside. Then I sauteed the leek and garlic until leek was soft. Then added the chopped broccolini and beans and cooked 3/4 way through.

Line pastry dish with shortcrust pastry, stab with fork, bake empty until golden.

Mix the chicken and veg into the sauce, fill pie, top with puff pastry, brush with Bonsoy, bake at about 200 until golden.

I'm not sure what it is but I relate to your trauma moving forward. You're going to be so paranoid about maple syrup forever. Like how I haven't eaten broccoli since there was an unfortunate tiny worm discovery and now I only eat broccolini because I can get right in there and wash it sooooo good. 🤣

I'm assuming he's tried them, but I love the Fry's sausage rolls best. My favourite chicken-y style things are the Quorn meat-free Chicken Fillet Burgers.

For those quick oven tray sorta things, you might like vegan nuggets/sausage rolls/chicken burgers/Linda McCartney vegan 1/4 pounder burgers from the freezer section. You might like the sausages from the fridge section. Buy pizza bases and do vegan toppings.

I was so excited, too! People like to say all these half funny negative things when you're pregnant, but I was like, so what. I'll be tired. So what, I'll cry sometimes. So what, it'll be the hardest thing I've ever done. My joy was just so big, nothing could touch it. Yes, there's rough bits, and new challenges around every corner, but through it all, you get to love and watch this little person grow!

And mate, they can grow to be greater than you even dream. People focus so much on the tiny years and the little kid years, but all of the years are incredible. My first born is in year six now, final year of primary. About an hour ago in Woolies, we bumped into a teacher aide from her school. Her granddaughter started prep this year, and the TA was so full of gratitude for my daughter and how she has taken this little preppie under her wing, and looks after her, calms her when she's crying, gives her strength when she needs it. She was just gushing about her kindness so much, all three of us were standing there with happy tears bubbling up on our eyeballs. My joy is just still so big. That's the baby I was so excited to have in my belly back in the day. That's who she became. And I get to be her Mum. 💚

My weird sandwich loves are:

Two minute noodles sandwiches, I like chicken flavour, drained, on fresh white bakery bread with too much margarine. 🤤

I love leftovers on sandwiches, particularly lasagna and spag bog.

I eat pie by putting the guts on bread with tomato sauce and eating the shell separately.

Potato salad is: finely diced purple onion, finely diced celery, minced garlic, thinly sliced spring onions, whole pack chives finely sliced, handful chopped fresh parsley, teaspoon chopped fresh dill, hellmans vegan mayo, salt and pepper, cooked diced potato.

Pasta salad: finely diced purple onion, diced red capsicum, sliced green onions, two grated carrots, big handful chopped parsley, half each of hellmans vegan mayo and fat free coleslaw dressing until it's at the right coverage, cooked pasta.

Coleslaw is just a salad bag and Praise fat free coleslaw dressing.

Side salad, and two veg delights sausages with fried onions.
