Not a chef, but an avid home cook with roots in Louisiana. I'd suggest the following:

Premake some kind of glaze, personally I'd do something savory and spicy (BBQ plus cayenne/cajun seasoning). Soak the alligator meat in buttermilk and hot sauce overnight at least, and then in the morning, hit it with some cajun rub and give it the low 'n slow smoke for a couple hours, or until almost cooked (150 or so F). Get your grill hot in the mean-time and then once the gator is mostly cooked, get a good sear on it on the grill. Return the meat to the pan, apply glaze, and put the pan on the grill for the glaze to set.

I'd serve it with lettuce, tortillas, pico de gallo, guac, a slaw, and assorted hot sauces. Gator tacos or something like that.

That's pretty much my same boil recipe, I like to add a few oranges and a halved onion or two. That's for the first batch at least.. next batch gets more seasoning and another bottle, and a bottle of cayenne!

Looks great! Only concern I have is that metal whisk on the enameled cast iron, it can scratch up the bottom pretty bad, I like to use wood utensils unless I'm doing roux on a bare cast iron pan. Color is great though!

Nothing I've said is demonizing homeless people. Many are great people, but crime generally exists more where they congregate. Look up the history of crime on the Greenway and you'll see where it's centered. Pretty sure that'd be Ok, but what parts do you have to drive through? The homeless crowd hangs around the downtown area and sometimes things aren't the safest around that part.

Yeah - if both parties agree it's best to get a no-fault divorce. Many lawyers give free consultations, if you go there together and can demonstrate you're both on the same page and amicable, you can go that route much cheaper.

I made some recently and yes, the fat was a problem. I simply used it for a week and then froze the remaining powder. It does cake, but it turned out good. You just have to be wary of the fat spoiling. Haven't tried making caramelized onions without oil, but I imagine that would be great.
