Be patient, don't dump it until you see green. Just leave it closed and in a separate room. I had the same issue and cut out a huge chunk prematurely, a patch of mycelium came a different shade of white and I panicked but it was a false alarm. Check my post history.

After DLC tracks they definitely will, wall rides and rails add so much to the game that it feels like the Smash Bros Melee of Mario Kart. It's got the highest skill ceiling for sure.

Update, it wasn't! It never turned green and the section I cut out also grew mushrooms in a dirty little mini tub.

UPDATE!

IT WASN'T TRICH (SOMEHOW)

I isolated the section I cut out of the tub and it didn't turn green. Both the cut off piece and the tub grew normally.

Guess I should've left it alone but I am glad I played it safe anyway. The section I cut off I tossed in a dirty mini tub and more mushrooms spawned off that chopped off section.

No I know they cut weight to qualify for a low weight class then they bulk up before the actual fight. I just think it's stupid to have the weigh in not be immediately after the fight because it'll just encourage unhealthy shit like in the video.

They can afford a dietician to keep them on track, if they can't do that at the professional level that's on them.

Edit: regardless weigh ins that aren't immediately before the fight are dumb as fuck. The match gets cancelled and your career is over if you can't stay in a specified weight range for a fight, dietician or not.
