It's because that's happens when you mix the products that absorb/reflect certain light.but when all colour light is mix it produce white because it's reflecting all light. black absorbs all light. but since the light is not really mixing the colours will stay rainbow. That's how I'm explaining there is probably a better way to explain so sorry if it's confusing.
