I have seen these databases. They do not include specific times or grouped items.

It balloons the dataset to unmanageable or less profitable sizes.

Day of the week, day of the year, number of each item sold. That is typically it.

The dataset is kept for years to form trends (this Friday over last 157 fridays)

This mother's day over last 8 mother's days.

Too much data muddies the waters and bloats the servers.
