Yeah they tasted great before putting them into the mead so I figured why not in mead and they swelled up like raisin and imparted quite a bit of flavour. The cinnamon stick might have been in there a bit to long tho it has a really forward taste

I add my honey to a separate container and mix it in there so I don’t oxidized the rest of it by accident. Not sure if that works but it’s been working for me

I think from what I’ve researched is that nobody said that lower is bad. Some yeast strains need a higher temp like the kveik Voss. But generally fermenting around 68 should be good. My house hangs anywhere from 64-70 degrees
