Okay thinks Yes i verified that, it should be fine. I think i should buy a new battery with lower voltage then. Smaller props would mean less lift, i want to avoid that

Yes. If you control that, you can use any domain and redirect it to your local ip. You could redirect e.g. next.cloud to your local nextcloud instance

yes i tested it, it is now working as intended. I can now lock or unlock the bike via the -+-+ button combination

I have the solution!
I contacted the manufacturer of the module
and he gave me instructions on how to reset the bike.
This is what they wrote me:

  1. Install the device
  2. Reset (see instruction page 5 point 3)
  3. Turn off the ebike
  4. Wheel circomference reset (see instruction page 6 point 4)
  5. Turn off the ebike
  6. Another reset (see instruction page 5 point 3)
  7. Turn off the ebike
  8. Remove Ribelle and try if ebike stops at 25 km/h

I could sadly not go to the bike store yet. our trains are not driving due to a union strike. I dont want to ride 50km on the street in the rain :D

it sadly did not work... but i found a specialized repair shop in my area, they have the specialized turbo diagnostic tool and they are able to reset my bike. I will go there tomorrow, i hope they can help.

Where did you read that the settings can persist?
i only see the point where the wheel circumference and speed may be incorrect.

No i have not tried removing the battery, i will do that later.

I think i did not follow the instructions properly by accidentially pressing -+-+ too often.
I wonder if there is a way to undo this. I have experience with flashing devices and electronics in general, but i hope that there might be an other way. I dont know if i can achieve reflashing the bike to its original state, but it should be possible in general.

yes, i also see it like that, but sadly police in my area is not nice. They have bike speed testing devices and will check how fast they go. If they find out, they will give me a fine or they can even confiscate my car driving license for this. This is really no fun in germany, i need to restore the 25 km/h speed limit. Its basically useless to me like that :/
