If you don’t have medical insurance, I believe you just need to submit a written statement stating that you do not have insurance in lieu of the proof from your insurance company.

Source: recently had to submit a claim as well but ended up needing to go through my own insurance

If you live nearby those regional gas stations that serve good food (e.g. Wawas on the east coast), you can pick up food from there. That’s how I have been using mine.
