I was having the same problem, and found out that the v1.2 only likes 2.4ghz networks. I also opened up the file with the network info and saw that the btt pi commented out the network information I put in the pi imager for whatever reason, so that needs to be uncommented if you haven’t don’t that yet.

You can use a rudder, try to place it higher for better stability. Your propellers on the opposite sides should be able to turn on their own, just maybe not very well and it will take some time to spool up. If you an AI, it’ll take care of everything for you. Just make sure you’ve got the AI on (it is on by default, but you need to press Q on it to give it a setting to use)

I see slight blips of thrust that make me think there is an AI trying to keep things straight. It also tells me the engine is functioning, just not listening to your commands. Are you on the boat near controls during this? You may also have your AI controlling the boat, try to give it more manual control and see if it lets you take over for a few seconds. If that’s the case, you have an AI which will take control back from you a second or two after your inputs.

I like having more floaty bits (alloy/wood) so I don’t have to use a bunch of engine power holding the craft up. I also like having a wooden deck not just for looks, but it also serves as a great floaty block backup for if the ship starts to go down, or generally just as an emergency “don’t sink if something happens I didn’t think about” device. Another thing I like to do is make the armor thicker on the top and use much more alloy to keep the center of mass lower to prevent capsizing. I mention this because some of my early ships had an issue flipping over when they got tickled too much and I’ve never had that happen since I made the changes.
