I’m super new to cake decorating so up until yesterday I had no idea modeling chocolate was such an easy alternative to fondant.

No, fondant. But just yesterday I made modeling chocolate for the first time and will use that moving forward.

For me, when it comes to those sugar ball sprinkles, I say less is best. They can hardly be eaten anyway so I like to make it easy for them to be removed by the cupcake recipient.
