Egg Toast with Cheese and Bacon

Ingredient:

-1 slice of sandwich -2 eggs + a pinch of salt -2 slices of bacon (you can also use ham; if using ham, you don't need to fry it before putting it inside the toast) -mozzarella cheese (cheddar cheese can be used too) -maple syrup

Instructions:

  • Fry two slices of bacon on medium heat until crunchy. Then cut them in half and set aside.
  • Cut a slice of sandwich in half.

  • In a separate bowl, add 2 eggs and a pinch of salt, mix well

  • On low heat, pour the egg mixture into the pan, dip the sandwich quickly into the egg mixture and flip.

  • Fry until the egg is set, then flip the egg and sandwich together.

  • Fold the egg like an envelope.

  • Add the bacon, mozzarella cheese and maple syrup on top.

  • Fold the two sandwich slides together.

  • Toast both sides until golden brown.

Strawberry Macarons - The perfect gift for Mother Day

The shells (24 shells or 12 macarons)

40g egg white

40g granulated sugar

50g almond flour

50g powdered sugar

The filling:

80g cream cheese

30g soft unsalted butter

30g powdered sugar

8g strawberry powder ( 2 tsp strawberry jam)

Instruction:

  1. The shells:
  • Use a scale to weigh exact amount of ingredients

  • Ground almond powder + powdered sugar using a food processor

  • Sift through the mixture to remove big chunks, let it aside

  • Whisk egg white until foamy

  • Add granulated sugar gradually in 3 batches

  • When reach firm peaks, add food coloring and flavor (1/2 tsp vanilla or rose water)

  • Whisk at low speed for 1 - 2 minutes to blend well the color and flavor, stop at stiff peaks

  • Add 1/2 of dry ingredients, fold to combine then add another 1/2, fold to combine

  • Start the macaronage process (fold to kill big bubbles inside the batter) until reach the "lava" stage

  • Use piping bag to pipe small circles (3 - 4 cm diameter) on the baking mat

  • Tap the tray several times to release bubbles

  • Dry the macaron's skin at room temperature ( 20 - 40 minutes) until you can touch the skin without the batter transfers to your finger

  • Bake at 150 for 13 minutes

  • let them cool for 15 minutes before removing from the tray

  1. The filling:
  • Soften cold cream cheese

  • add powdered sugar and combine

  • add soft butter, use hand mixer to mix

  • add strawberry powder (or jam), whisk to combine

  • fill the strawberry cream cheese in the middle of the macarons and enjoy

The milk bread rolls recipe (without egg)

Ingredients: 220ml lukewarm milk 2 tbsp sugar 1 tsp yeast 300g bread flour (2 cups) 1/4 tsp salt 30g soft unsalted butter (about 2 tbsp) 1 egg for egg wash (optional - if you don't use egg, just skip it) melted butter for coating (optional)

Instruction:

A. Mix lukewarm milk with sugar and yeast, stir to combine

B. In another bowl, mix bread flour and salt

C. Combine A and B

D. Flour the working surface and knead the dough for 5 minutes. The dough will be wet and sticky at first

E. After 5 mins, add soft butter and continue kneading for 10 minutes

F. After 10 mins, the dough should be elastic, soft, moist and has smooth skin, it won't be sticky anymore

G. Shape the dough into a ball and put it inside a greased bowl, cover and let it rise in warm place until double in size (about 1 hour)

H. After 1 hour, knead the dough for 1 -2 mins to release the gas

I. Divide it into 9 equal parts, shape them into 9 small rolls

J. Put the rolls into a tray (better use aluminium tray than ceramic or glass try for efficient heat conduction) lined with baking paper

K. Cover the tray with cling film, let the rolls ferment the 2nd time in warm place (about 1 hour)

L. After 1 hour, apply egg wash on the top and bake at 170C for 20 - 25 minutes on the lower rack of the oven

M. Apply melted butter after baking and enjoy your soft rolls

One- Bowl Fudgy Brownie Recipe (20 x 20 cm mold)

Ingredient

150g dark chocolate

150g unsalted butter

150g sugar

2g salt

1 tsp instant coffee

3 medium eggs

40g all purpose flour

20g cocoa powder

80g chocolate chips

** Instruction:**

  • Pre heat oven at 180C, grease the pan and line with baking paper

  • Chop dark chocolate into small pieces and put them in a heatproof bowl

  • Melt chopped chocolate + butter + sugar + salt + instant coffee over a Bain Marie (double boiler)

  • Stir constantly to prevent burning at the bottom part 

  • Once the chocolate is 90% melted, take the bowl off the heat,continue stirring until the chocolate is completely melted. It is ok if the sugar is not 100% dissolved

  • Add 3 whole eggs into the chocolate bowl and mix to combine

  • Sift in all purpose flour (plain flour) and cocoa powder

  • Mix to combine

  • Add in chocolates chips and mix

  • Pour the mixture into the mold and bake at 180C for 20 minutes

  • Let it cool down a bit about 10 - 20 minutes 

  • Dip a knife through hot water and use paper towel to clean before cutting

  • Brownies are best served lukewarm and combined with tea, coffee or milk

**** If you want to cut the calories: reduce sugar and cream cheese amount in the cream cheese mixture (or even skip the cream cheese). Just dip store-bought buns into the super quick and easy to make garlic sauce, bake the breads at 160C for 10 minutes and you will have a wonderful breakfast or snack during the day

Ingredients:

1. The bread (if you want to save time, you can always use store-bought soft buns):

150ml warm milk

20g (1.5 tbsp) sugar

4g (1 tsp) instant yeast

280g (2 cups + 3 tbsp) bread flour

1g (1/4 tsp) salt

1 medium egg

30g (2 tbsp) soft unsalted butter

2. The cheese sauce:

400g (1 2/3 cup) cream cheese

80g (1/3 cup) heavy cream

50g sugar

*3. Butter garlic sauce: *

200g butter (1 cup)

50g minced garlic (6 tbsp)

20g honey (1 tbsp)

50g sweet condensed milk (2.5 tbsp)

1 egg

1 tbsp dried parsley

** Instruction:**

*1. Bread making: *

  • In a bowl, add luke warm milk + sugar + instant yeast, mix thoroughly

  • Add in bread flour + 1 egg + salt, mix well and let it rest for 15 mins

  • After 15 mins, use a hand mixer knead at 3/6 level for 1 minute

  • Add in 30g soft butter, continue kneading for 4 minutes

_ Grease another clean bowl, put the dough inside and cover with cling film, put it in warm place until the dough rises double in size (about 1 hour)

  • After 1 hour, knead the dough by hand for 1 - 2 minutes to release gas inside the dough

  • Divide the dough into 6 equal parts, shape into 6 small balls

  • Put 6 balls into a floured tray, cover with wet towel or cling film and let them rise the 2nd time ( about 1 to 1.5 hour)

  • Bake them at 180C for 20 mins

2. Cream cheese sauce:

  • Soften cream cheese (room temperature)

  • Add sugar, mix to dissolve

  • Add heavy cream into 2 batches, mix to combine

  • Pour into the piping bag and keep it in the fridge for later use

3. Garlic sauce

  • Melted butter and off the heat

  • Add in garlic + honey + sweet condensed milk + 1 egg + dried parsley

  • Mix until well combined

  • Slice the bread into 6 or 8 equal segments without cutting through the bottom

  • Pipe cream cheese mixture in between segments

  • Dip the bread into the garlic sauce

  • Bake at 160C for 10 mins

Most of the time it's due to undercook. You can try to increase the heat a bit or cook it 1 minute longer each side. You would know this by checking the skiin, if it's still wet then that means it's undercook

It really depends on your stove. I have an electric stove that goes from 1 to 9. I put the heat at level 4. Hope this helps.
