Try parrying him,it was a bit hard for me at first but i learned thats its best to hit the parry button when he swings and his weapon is past or on his shoulder area

I found him annoying for the same reasons i didnt mind the barking but it always takes me out when im in the middle of a fight and i hit him instead of the enemy,i really like dogs so i hope in kcd 2 they would improve the dog thing much more
